PB & J Bars


Santa Cruz Organic® Products used in this Recipe:


Ingredients:

  • 6 tbsp unsalted butter, softened
  • 1 cup Santa Cruz Organic® Peanut Butter
  • ½ cup light brown sugar
  • 1 large egg
  • ¾ cup all purpose flour
  • ½ tsp salt
  • ¾cup seedless raspberry jam

Directions:

  • Preheat oven to 350° degrees.
  • Spray a 9" x 13" metal baking pan with nonstick spray.
  • Blend together butter, peanut butter, and brown sugar in a large bowl until smooth.
  • Add egg and continue mixing.
  • Add flower and salt and mix until dough forms.
  • Reserve 1 cup dough for topping.
  • Press remaining dough evenly in bottom of pan.
  • Spread jam in an even layer on top of dough and then coarsely spoon drop reserved dough over jam layer.
  • Bake 30 - 35 minutes.
  • Cool completely, then cut into bars.
Makes 28, 2"x2" bars.
